Sometimes it can feel like we don’t have enough time to feed ourselves properly. Throwing together a quick salad doesn’t take much time at all, and if you add some protein it will keep you feeling satisfied for longer.

This one contains baby spinach, rocket, cannellini beans, radish, cucumber, carrot, tomato, mushroom, olives and jalapenos with olive oil, balsamic and mustard dressing.

For those in the cooler season in the northern hemisphere, you could use all the same ingredients (minus the cucumber and dressing) and throw them in to some simmering chicken stock for a quick, easy and nourishing soup.
